Recipe: Marie Biscuit Chocolate Squares

These crunchy, chocolaty squares are the yummiest, messiest things ever! Super easy to make, with no expensive ingredients (I always use marg – who can afford butter?!). These will be a hit with the whole family. Make sure your kids are not wearing their Sunday best, as things are bound to get messy!

This is a family favourite recipe that has been handed down. One of those handwritten treasures you always hang on to, and that comes out with every family get-together. I have tweaked it slightly to add a coffee flavour, and also swapped out some of the icing sugar for regular sugar to add extra crunch. I hope you will enjoy it as much as we do!

Recipe: Marie Biscuit Chocolate Squares

Makes: approx 30 squares

Chocolate Squares

You will need:

  • 450gr icing sugar
  • 50gr regular sugar
  • 4 Tablespoons Cocoa Powder
  • 250gr Margarine or Butter (I use Stork margarine)
  • 2 eggs
  • 1 teaspoon vanilla essence
  • 1 1/2 pack Marie Biscuits – crushed into small pieces (chunky, not powder)

Optional

  • handful of chocolate chips
  • 15ml strong coffee

Instructions:

  1. Melt the Margarine on the stove top on a low heat. Do not allow it to boil.
  2. Add icing sugar, regular sugar and cocoa to the melted marg and mix well.
  3. Beat the eggs in a bowl and add to the icing mix on the stove. Be sure to mix the egg in quickly to prevent it from cooking.
  4. Add in vanilla essence, coffee and crushed biscuits. Mix well and remove from heat.
  5. Add in chocolate chips, saving a few to sprinkle on the top.
  6. Pour chocolate mix into well greased glass dish and flatten with the back on a spoon. Take remaining chocolate chips and sprinkle them on top.
  7. Place dish in fridge and leave to cool completely. Once the mix has set, cut into squares and move to freezer for storage.

Top tip: Always leave the squares in the fridge or freezer, or the chocolate will melt.

Stays good for up to a week.
